Preparing Firecracker Chicken
Making Firecracker Chicken is a delightful experience that combines the vibrant flavors of sweet and spicy with the satisfying crunch of fresh vegetables. Let’s dive into the steps to bring this culinary masterpiece to your dinner table!
Marinate the chicken
Start by preparing your marinade, which is the heart of the firecracker chicken flavor. In a large bowl, mix together vegetable oil, red chili, chili sauce, minced garlic, brown sugar, light and dark soy sauce, ketchup, malt vinegar, tamarind paste, fish sauce, and a pinch of white pepper. Once this concoction is well blended, add in the chicken chunks. Make sure they’re fully coated. For optimal flavor, cover the bowl with cling film and let it marinate for at least an hour, or even overnight if you have time. This step really allows those flavors to penetrate the chicken, creating a zesty bite that will impress anyone!
Cook the rice
While the chicken is marinating, go ahead and cook your rice. This recipe complements boiled long grain rice perfectly, acting as a soft backdrop to the robust flavors of the stir fry. Follow the package instructions, or check out my no-fail rice cooking guide. Having perfectly cooked rice is key to a balanced dish!
Sauté the chicken
Once your chicken has marinated and your rice is bubbling away, it’s time to heat things up! In a wok or a large frying pan, add a tablespoon of oil and heat it over high heat until it’s sizzling. Using a slotted spoon, scoop the marinated chicken out, letting excess sauce drip off, and throw it into the hot pan. You're looking for a light browning and for the chicken to be nearly cooked through—this should take about 4 to 5 minutes.
Add the vegetables and sauce
Now it’s time to bring your dish to life with veggies! Toss in the sliced onion and let it cook for another 2 minutes until it softens. Then, pour in the reserved marinade and stir until it bubbles. Add in the bell peppers, mangetout, and those fiery dried chilies. Cook everything together for a minute before folding in the spring onions. You may want to add a splash of water to loosen the sauce—this ensures every bit of chicken and veggie gets that flavorful coating.
Plate the firecracker chicken
Once everything is beautifully cooked, it’s plating time! For an elegant touch, take your freshly cooked rice and spoon it into a lightly oiled bowl, pressing it down gently. Flip the bowl onto a serving plate to create a charming rice mound. Finally, spoon the firecracker chicken around the rice, and for that extra flair, sprinkle with shichimi powder and sesame seeds. A wedge of lime on the side will not only brighten the dish but also add a fresh zing when squeezed over the top.
This Firecracker Chicken will surely become a staple in your kitchen—faster than takeout and packed with flavor! Enjoy your culinary creation!

Cooking tips for Firecracker Chicken
Tips for marinating effectively
To elevate your Firecracker Chicken, marinade is key! Make sure to marinate the chicken for at least one hour, but if you have time, overnight is ideal. This allows the flavors to penetrate the meat fully. For extra zing, you can add a splash of lime juice to the marinade for that citrusy brightness. Remember to save some marinade aside for later; it will enhance the stir-fry sauce!
Best practices for stir-frying
When it comes to stir-frying, high heat is your best friend. Preheat your wok or frying pan until it’s sizzling hot — this ensures your chicken gets that lovely sear. Cook the chicken in batches to avoid overcrowding, which helps it cook evenly. Finally, toss in your veggies only after the chicken is nearly done, so they stay crisp and retain their vibrant color. For a perfect finish, a splash of water can loosen the sauce if it thickens too much. Enjoy your homemade Firecracker Chicken!
