Ingredients
  

Broth and Noodles

  • 8 cups low sodium chicken broth
  • 12 ounces dried pho noodles

Aromatics and Seasoning

  • 8 slices ginger
  • 2 whole red chilies sliced
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons oil for searing

Chicken

  • 2 pieces boneless skinless chicken thighs or breasts thinly sliced

Garnishes

  • 1 cup fresh bean sprouts
  • cup fresh mint
  • cup fresh cilantro
  • cup Thai basil
  • Lime wedges

Cooking Instructions

  • Bring a pot of water to a boil for the noodles and the stock to a boil in a medium pot with ginger, chilies, fish sauce, and sugar. Simmer for 15 minutes.
  • Season the chicken with salt and pepper. Heat 2 tablespoons of oil over high heat in a skillet and sear the chicken. Set aside.
  • Boil the noodles according to package instructions. Divide the noodles among 4 bowls, adding broth and chicken to each, garnished with bean sprouts, mint, cilantro, and basil.
  • Squeeze lime juice over each bowl and add more fish sauce if desired.
