Ingredients
  

  • 4 oz unsweetened applesauce can also use sweetened
  • ¾ cup quick oats
  • ¼ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  • Add applesauce and oats to a large bowl. Stir until evenly mixed and all oats are coated in applesauce.
  • Stir in the chocolate chips until they are evenly incorporated.
  • Use a 1.5 tablespoon cookie scoop to scoop out cookie dough. Release cookie dough onto prepared baking sheet, spacing the dough balls about 1.5 inches apart. Use the palm of your hand to press down on each cookie dough ball so that it forms a thick round disk. Smooth and reshape edges of cookies to make them round if needed. If desired, add a few additional chocolate chips on top of each cookie.
  • Bake cookies for about 13-15 minutes. Let cookies cool on baking sheet before removing and eating. When cookies are cooled, they should come off the baking sheet easily.

Notes

You can use homemade or store bought applesauce. If you don't like the chewy oat texture, you can use oat flour instead. These cookies are sweet but not super sweet.
