Ingredients
  

Fruits

  • 1000 g brambly or cooking apples
  • 300 g blackberries
  • 3 tbs caster sugar

Crumble mix

  • 150 g plain flour
  • 120 g melted butter
  • 50 g porridge oats
  • 80 g Demerara sugar
  • 0.25 teaspoon cinnamon

Vanilla custard

  • 300 mls shop bought custard
  • 100 mls lightly whipped cream
  • 0.5 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 160C.
  • Peel the apples and cut them into quarters, then remove the cores and slice each piece in two.
  • Put them into a pan, sprinkle with the sugar, and cook over a medium heat for about five minutes, until the apples start to soften.
  • Fold through the blackberries.
  • Transfer the apple mixture to a shallow ovenproof pie dish.
  • Place the flour, oats, cinnamon and brown sugar into a bowl, now add in the melted butter, mix together, don’t worry if it clumps up a little.
  • Now sprinkle over the cooked apples in the pie dish. Transfer to the oven to bake for 30 minutes or until crisp and golden-brown on top.

Notes

The cream should be whipped lightly before adding the vanilla extract and folding it through the custard for the best texture.
