Ingredients
  

Salad

  • 1 head romaine, chopped
  • 4 cups napa cabbage, chopped thin
  • 2 cups red cabbage, chopped thin
  • 2 cups shredded carrots
  • 1 medium red pepper, julienned
  • 4 cups cooked chicken breasts, shredded (about 3 small breasts)
  • ½ cup cilantro, chopped
  • ½ cup green onion, chopped
  • 2 10oz cans Mandarin oranges, drained
  • 1 cup salted peanuts
  • 1 cup chow mein noodles
  • ¼ cup sesame seeds
  • salt & pepper to taste

Dressing

  • ½ cup avocado oil (or other neutral oil)
  • ¼ cup sesame oil
  • ¼ cup rice wine vinegar
  • ¼ cup soy sauce
  • ¼ cup honey
  • 1 teaspoon sriracha
  • 2 teaspoon minced ginger
  • 2 cloves garlic, minced

Instructions

  • Start prepping the salad by adding lettuce and cabbages to a large bowl. Add on carrots, pepper, chicken, cilantro, and green onion and toss to mix together.
  • Add on mandarin oranges, salted peanuts, chow mein noodles, and sesame seeds.
  • In a glass measuring cup, whisk together all dressing ingredients until well combined. Pour over top of salad and toss gently using tongs until well coated and salad is mixed.
  • Serve!
