  • 4 beets steamed beets peeled after steaming
  • 1 large fennel bulb save some fronds for garnish
  • 0.25 small red onion thinly sliced
  • Lemon vinaigrette recipe below

Lemon Vinaigrette Ingredients

  • 2 tablespoon fresh lemon juice from about 1 lime
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 teaspoons maple syrup or agave
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cumin powder or cumin seeds
  • 1 clove garlic minced
  • 0.33 cup extra virgin olive oil
  • toasted pumpkin seeds for garnish

Salad Preparation Steps

  • Cut the beets into cubes.
  • Thinly slice the fennel bulb using a mandolin or sharp knife.
  • Place the beets, fennel, and onion in a mixing bowl.
  • Pour the vinaigrette over the mixture and toss with your hands.
  • Season to taste with salt.
  • Garnish with fennel fronds.

Vinaigrette Preparation Steps

  • Place the vinaigrette ingredients into a jar.
  • Tighten the lid and shake until emulsified.
