Ingredients
  

  • 4 tablespoons chia seeds
  • 1 cup milk of choice such as almond milk or coconut milk
  • 1 cup fresh or frozen blueberries
  • 1 to 2 teaspoons maple syrup or other sweetener optional
  • ½ teaspoon vanilla extract optional
  • 1 teaspoon lemon juice optional
  • 1 small pinch salt optional
  • Yogurt for topping optional
  • Extra blueberries for topping optional

Instructions
 

  • Blend or mash the blueberries with the milk, maple syrup, vanilla extract, lemon juice, and salt until mostly smooth.
  • Pour the blueberry mixture into a jar or container.
  • Stir in the chia seeds until evenly combined.
  • Let the mixture sit for 5 minutes, then stir again well to prevent clumping.
  • Cover and refrigerate for at least 2 hours or overnight until thick and creamy.
  • Stir before serving and add yogurt or extra blueberries on top if desired.

Notes

This recipe can be dairy free and vegan depending on the milk and toppings used. It stores well in the refrigerator for up to 4 to 5 days.
