Ingredients
  

Cookie Ingredients

  • 2.5 cups all-purpose flour spooned & leveled
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter softened to room temperature
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed light or dark
  • 1 large egg at room temperature
  • 1.5 teaspoons pure vanilla extract
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 0.25 cup milk
  • 2 cups blueberries fresh or frozen
  • 1 tablespoon coarse sugar optional for a little crunch

Lemon Glaze

  • 1.5 cups confectioners’ sugar sifted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoons half-and-half or heavy cream or milk

Instructions
 

Cookie Preparation

  • Whisk the flour, baking powder, and salt together in a large bowl. Set aside.
  • Beat the butter, granulated sugar, and brown sugar together on high speed until creamy, about 2 minutes.
  • Add the egg, vanilla extract, lemon zest, and lemon juice. Beat on medium-high speed until combined.
  • Slowly add the dry ingredients and milk. Beat until just incorporated. Fold in blueberries.
  • Cover dough tightly and chill in the refrigerator for 30-45 minutes or up to 2-3 days.
  • Preheat your oven to 350°F (177°C). Line baking sheets with parchment paper.
  • Scoop dough, about 1.5 tablespoons each, and place 3 inches apart on the baking sheets. Bake for 15-16 minutes.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Lemon Glaze Preparation

  • Whisk confectioners’ sugar, lemon juice, and half-and-half together until smooth. Spoon over cookies.
  • If thinned, the glaze will set within a couple hours.

Notes

Glazed cookies will stay fresh covered at room temperature for 2 days or in the refrigerator for up to 1 week.
