For the Filling
- 2 cups Fresh Blueberries or Frozen, Thawed
- ¼ cup Granulated Sugar Adjust based on the sweetness of your berries
- 2 tablespoons Cornstarch Acts as a thickener
- 2 tablespoons Lemon Juice Freshly Squeezed
- 1 teaspoon Vanilla Extract Opt for pure for maximum flavor
For the Egg Wash
- 1 large Egg For a vegan option, use almond milk and cornstarch
- 1 tablespoon Milk Any type, dairy or non-dairy
Method
Prepare the Filling: In a medium bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix gently and let sit for about 10 minutes to allow the flavors to blend.
Roll Out Crusts: Lightly flour your work surface and roll out the refrigerated pie crusts until they’re nice and smooth. Use a round cutter to cut out 4-inch circles.
Assemble Pie Bombs: Place about a tablespoon of the blueberry filling in the center of each dough circle. Fold the circle over to create a half-moon shape, and seal the edges carefully by pressing and crimping them with a fork.
Apply Egg Wash: Preheat your oven to 375°F (190°C). In a small bowl, whisk together the egg and milk for the egg wash. Brush the mixture over the tops of the assembled pie bombs.
Bake: Arrange the pie bombs on a parchment-lined baking sheet. Bake for 20-25 minutes, or until golden brown and puffed up.
Cool and Serve: Allow the blueberry pie bombs to cool slightly after baking. Dust with powdered sugar before serving if desired.
