Ingredients

  • ¾ cup brown sugar
  • ¾ cup granulated sugar

  • 1 teaspoon baking soda
  • ½ teaspoon salt

Baking Instructions

  • Preheat your oven to 350°F (175°C).
  • Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add vanilla extract and eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together flour, baking soda, and salt; gradually add this to the wet mixture until just combined.
  • Fold in butterscotch chips.
  • Chill the dough for about 20 minutes in the freezer or 40 minutes in the fridge.
  • Drop tablespoon-sized balls of dough onto a parchment-lined cookie sheet.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Let cool on the cookie sheet for five minutes before transferring to a cooling rack.

Notes

For best texture, ensure butter is softened to room temperature before creaming with sugars.
