Base

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half

Meats

  • 3 cups cooked chopped chicken
  • 1 pound smoked or andouille sausage sliced and browned

Canned Goods

  • 2 15-ounce cans red beans rinsed and drained
  • 1 11-ounce can white corn drained
  • 2 4-ounce cans chopped green chilies undrained

Seasonings

  • 2 tablespoons dried minced onion flakes
  • ¼ teaspoon garlic powder
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • tablespoons Cajun seasoning

Cheese

  • 2 cups shredded pepper jack cheese

Instructions
 

Preparation

  • In a Dutch oven, melt the butter over medium heat, then stir in the flour. Cook for about 2 minutes.
  • Gradually whisk in the chicken broth and half-and-half. Bring the mixture to a boil and cook for 2 minutes, until it thickens.
  • Add the remaining ingredients, stirring occasionally, and cook for 10 to 15 minutes until heated through.
