Ingredients
  

Onions

  • 5 pcs large onions thinly sliced

Oils

  • 3 tablespoon olive oil

Cheeses

  • 180 g vegan cream cheese or regular cream cheese
  • 50 g vegan parmesan cheese or regular parmesan cheese

Seasonings

  • Salt to taste
  • black pepper to taste

Pasta

  • 400 g cooked pasta
  • ½ cup pasta water

Garnishes

  • fresh parsley chopped, for garnishing
  • chili oil for drizzling

Instructions
 

Preparation

  • Heat the olive oil in a large pan over medium-low heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 30–40 minutes until deeply golden and caramelized.
  • Transfer the caramelized onions to a large mixing bowl. Add the cream cheese, Parmesan, a generous amount of black pepper, and pasta water. Stir until well combined and creamy.
  • Return the mixture to the pan over low heat. Add the cooked pasta and toss until everything is well coated and heated through.
  • Plate the pasta, then garnish with chopped parsley and a drizzle of chili oil.

This dish can be made vegan or with regular dairy options.
