Ingredients
  

Cheese Mixture

  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • salt to taste
  • pepper to taste

Breading Station

  • 1 cup panko breadcrumbs
  • 2 large eggs whisked

Oil for Frying

  • 2-3 inches neutral oil (vegetable or canola) for frying

Garnish

  • fresh parsley optional, for garnish

Preparation Steps

  • Combine shredded mozzarella and grated parmesan cheese in a bowl. Season lightly with salt and pepper. Toss gently to combine.
  • Set up a breading station with three shallow dishes: one with panko breadcrumbs, one with whisked eggs, and one for the final panko coating.
  • Roll about a tablespoon of the cheese mixture into a ball. Roll it in panko breadcrumbs, dip in the whisked egg, and roll back into panko breadcrumbs, pressing gently to coat thoroughly.
  • Heat 2-3 inches of neutral oil in a heavy-bottomed pot or deep fryer to about 350°F (175°C).
  • Carefully add the coated mozzarella bites to the hot oil in batches. Fry for 2-4 minutes or until golden brown.
  • Remove the bites from the oil using a slotted spoon and place them on paper towels to drain excess oil. Garnish with fresh parsley if desired. Serve immediately.
