Pasta and Chicken
- 8 ounces fettuccine pasta
- 1 pound boneless, skinless chicken breasts
Sauce and Spinach
- 3 cups fresh spinach
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- Salt to taste
- Pepper to taste
Cooking Instructions
Cook the fettuccine in salted boiling water until al dente, then drain.
In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, cooking until browned (6-8 minutes). Remove from skillet.
Sauté spinach and garlic in the same skillet until wilted (2-3 minutes).
Add butter and cream; simmer before gradually stirring in Parmesan until smooth.
Return chicken and pasta to the skillet, mixing well with the sauce.
Serve garnished with parsley.
