Ingredients
  

  • 2 pieces boneless, skinless chicken breasts 10 ounces each
  • 1.5 teaspoons kosher salt
  • 0.75 teaspoons black pepper divided
  • 0.25 cups olive oil divided
  • 2 tablespoons unsalted butter divided
  • 0.25 cups all-purpose flour
  • 8 ounces fresh cremini mushrooms trimmed and sliced
  • 1 large shallot finely chopped
  • 3 cloves garlic finely chopped
  • 1 teaspoon fresh thyme leaves
  • 0.5 cups dry white wine
  • 2 tablespoons dry sherry
  • 0.5 cups chicken stock
  • 0.75 cups heavy whipping cream
  • 4 cups fresh baby spinach packed
  • 1 ounce Parmesan cheese grated

Instructions
 

  • Slice each chicken breast in half horizontally and pound to an even thickness. Season with salt and pepper.
  • Heat olive oil and butter in a skillet. Dredge chicken halves in flour and cook until browned, then transfer to a plate.
  • Cook mushrooms in the skillet with remaining oil and pepper, then add shallot, garlic, and thyme until fragrant.
  • Add wine and sherry, then simmer until alcohol smell dissipates. Add chicken stock and reduce slightly.
  • Stir in heavy cream, simmer, and wilt spinach before adding chicken to heat through. Stir in Parmesan until melted.
