Instructions
Slice each chicken breast in half horizontally and pound to an even thickness. Season with salt and pepper.
Heat olive oil and butter in a skillet. Dredge chicken halves in flour and cook until browned, then transfer to a plate.
Cook mushrooms in the skillet with remaining oil and pepper, then add shallot, garlic, and thyme until fragrant.
Add wine and sherry, then simmer until alcohol smell dissipates. Add chicken stock and reduce slightly.
Stir in heavy cream, simmer, and wilt spinach before adding chicken to heat through. Stir in Parmesan until melted.
