Make the chipotle mayo ahead of time and store in a container for up to 3 weeks. If you can’t find any adobo sauce, toast a ripe jalapeno and mix together 1 tbsp. tomato paste, 1 tbsp. apple cider vinegar, ½ tsp. chipotle powder and a pinch of oregano, garlic powder and salt. Store all the components separately in the fridge for 3-4 days then assemble your sandwich fresh. Freeze the shredded chicken for up to 3 months. Defrost in the fridge overnight then reheat.
