Ingredients
  

Pie Crust

  • 1 pie crust pie crust dough for a 9 ½ inch pie plate See notes for recipes

Filling

  • 2 cups whole roasted almonds Approximately 12 ounces
  • 2 ounces bittersweet or semisweet chocolate at least 60% cocoa
  • 2 ounces unsweetened chocolate
  • 3 tablespoons butter salted or unsalted
  • ¾ cup brown sugar dark or light
  • cup corn syrup light or dark
  • cup honey
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons bourbon or rum or any kind of whisky
  • 1 ½ teaspoons table salt OR 2 teaspoons kosher salt
  • 1 tablespoon unsweetened cocoa powder
  • ¼ cup powdered sugar for dusting over the top

Instructions
 

Preparation

  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove pie dough from the refrigerator and roll it out on a lightly floured surface into a 13-inch circle.
  • Fold the dough in half and then over again, making a triangle to place in the pie plate.
  • Trim the excess dough and crimp the edges for a decorative finish.
  • Cover the crust with plastic wrap and refrigerate while preparing the filling.
  • Melt the chocolates and butter in a microwave-safe bowl or saucepan.
  • Chop the almonds if desired.
  • Combine melted chocolate mixture, brown sugar, corn syrup, honey, eggs, vanilla, bourbon, salt, and cocoa powder, and beat until aerated.
  • Stir in the almonds and pour filling into the chilled pie shell.
  • Bake for 40-50 minutes until set and slightly jiggly in the center.
  • Remove from oven and let cool completely, then dust with powdered sugar before serving.

Notes

Refer to linked pie crust recipes for options or use a prepared frozen pie crust. Roasting the almonds enhances their flavor.
