Ingredients
  

Chicken

  • 4 pieces boneless, skinless chicken breasts

Seasoning

  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper to taste

Filling

  • 4 ounces brie cheese, sliced
  • ½ cup dried cranberries or fresh cranberry compote

Cooking and Garnish

  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • ½ cup chicken broth
  • ½ cup cranberry sauce for glaze

Cooking Steps

  • Preheat the oven to 375°F (190°C).
  • With a sharp knife, carefully cut a pocket into the side of each chicken breast, keeping the other sides intact.
  • Evenly season both sides of the chicken breasts with garlic powder, paprika, salt, and black pepper.
  • Fill each chicken pocket with brie cheese slices and a generous spoonful of dried cranberries or fresh cranberry compote.
  • If needed, use toothpicks to secure the opening and keep the filling inside during cooking.
  • Heat olive oil in an ovenproof skillet over medium-high heat. Add the stuffed chicken breasts and sear for 2 to 3 minutes per side until golden brown.
  • Pour chicken broth into the skillet around the chicken, then spoon cranberry sauce over the top of each breast.
  • Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, or until the chicken is thoroughly cooked and the cheese has melted.
  • Remove toothpicks, drizzle with pan juices, and garnish with fresh thyme leaves. Serve hot with extra cranberry glaze if desired.

Notes

For a lighter version, substitute brie cheese with low-fat brie or goat cheese. Ensure the chicken is fully cooked to an internal temperature of 165°F (74°C) for safe consumption. Roasted Brussels sprouts or sweet potatoes complement this dish and maintain gluten-free status. Preparation of the chicken breasts can be completed in advance and refrigerated until ready to cook. To add vibrant flavor, use homemade or fresh cranberry compote.
