Ingredients
  

  • 1.5 lbs ground beef
  • 1 lb kielbasa sausage, sliced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 large gold potatoes, peeled and diced
  • 30 oz pinto beans, rinsed and drained
  • 15 oz whole kernel corn, drained
  • 15 oz diced tomatoes undrained
  • 14 oz Rotel undrained
  • 10 oz frozen mixed vegetables green beans, carrots, peas and corn
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 2 teaspoons freshly chopped parsley for garnish

Instructions
 

  • In a large skillet over medium high heat, cook and crumble the ground beef until browned and cooked through. Add the onions and minced garlic and cook for another 2 minutes, remove from heat.
  • Add the beef and onion mixture to the bottom of a 6 quart or larger slow cooker, along with the remaining ingredients.
  • Cover with the lid and cook on high for 3-4 hours or low for 6-8 hours, until the vegetables are soft and cooked through.
  • Garnish with parsley and serve immediately. Enjoy!
