- 1.5 lbs ground beef
- 1 lb kielbasa sausage, sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 3 large gold potatoes, peeled and diced
- 30 oz pinto beans, rinsed and drained
- 15 oz whole kernel corn, drained
- 15 oz diced tomatoes undrained
- 14 oz Rotel undrained
- 10 oz frozen mixed vegetables green beans, carrots, peas and corn
- 2 cups beef broth
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 0.5 teaspoon kosher salt
- 0.25 teaspoon ground black pepper
- 2 teaspoons freshly chopped parsley for garnish
In a large skillet over medium high heat, cook and crumble the ground beef until browned and cooked through. Add the onions and minced garlic and cook for another 2 minutes, remove from heat.
Add the beef and onion mixture to the bottom of a 6 quart or larger slow cooker, along with the remaining ingredients.
Cover with the lid and cook on high for 3-4 hours or low for 6-8 hours, until the vegetables are soft and cooked through.
Garnish with parsley and serve immediately. Enjoy!
