- 2 tablespoon olive oil for crispiness
- 2 tablespoon southwest chipotle seasoning adds smoky and spicy kick
- 4 cloves garlic minced for aromatic boost
- 0.5 teaspoon black pepper adjust to taste
For the Vegetables
- 1 large zucchini sliced ¼ inch pieces
- 1 large yellow squash sliced ¼ inch pieces
- 1 large red pepper cubed
- 1 small onion cubed
- 8 oz cremini mushrooms optional rich umami flavor
Cooking Instructions
Preheat the air fryer to 400°F.
Marinate the shrimp in a bowl with salt, garlic, olive oil, and southwest chipotle seasoning.
Toss in the zucchini, yellow squash, red pepper, onion, and optional cremini mushrooms.
Cook the mixture in the air fryer in two batches for 8 minutes each.
Shake the basket once or twice during cooking for even results.
