Method

  • Combine glutinous rice flour and baking powder in a large bowl, mixing well.
  • Heat milk, sugar, vanilla extract, and salt in a saucepan over medium-high heat until almost boiling.
  • Remove from heat, add cold butter, and let cool for 10 minutes.
  • Beat large egg in a separate bowl, then slowly pour into the cooled milk mixture while whisking continuously.
  • Pour the wet mixture into the dry ingredients and mix until a thick paste forms.
  • Preheat waffle iron, spray with oil, scoop ⅔ cup of batter, and cook until golden brown.
  • Use a chopstick to slide the waffles out for safe removal.
