  • 1 package Puff Pastry keep it cold for best results

For the Custard Filling

  • 6 large Egg Yolks crucial for authentic texture and flavor
  • ¾ cup Sugar adjust based on taste preferences
  • 2 cups Milk whole milk or cream preferred
  • 1 teaspoon Vanilla Extract use pure for the best flavor

For Serving

  • 1 teaspoon Cinnamon optional, highly recommended
  • ¼ cup Powdered Sugar can be omitted for less sweetness

Method

  • Prepare the Pastry: Roll out your cold puff pastry on a floured surface to about ⅛ inch thick. Cut out circles that fit snugly into a muffin tin, ensuring they'll hold the custard. Chill in the fridge while you prepare the filling.
  • Make the Custard: In a saucepan, whisk together egg yolks, sugar, and milk over medium heat. Stir continuously for about 10 minutes, until the mixture thickens slightly and coats the back of a spoon.
  • Add Flavor: Remove the custard from heat and stir in the vanilla extract along with a pinch of cinnamon.
  • Fill and Bake: Pour the luscious custard into the chilled pastry shells, filling them about ¾ full. Bake in a preheated oven at 400°F for about 20 minutes, until the tops are beautifully caramelized.
  • Cool and Serve: Let the tarts cool for a few minutes before gently removing them from the muffin tin. Dust with powdered sugar and a sprinkle of cinnamon, then serve warm.
