  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, diced
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Fresh parsley, for garnish

Preparation Steps

  • Preheat the Oven. Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  • Combine the Base Ingredients. In the prepared dish, add the uncooked rice, chicken broth, tzatziki sauce, oregano, garlic powder, salt, and pepper. Stir well so the flavors are evenly distributed.
  • Add the Chicken and Vegetables. Stir in the cooked chicken, cucumber, tomatoes, and onion. Spread everything out evenly in the dish.
  • Bake Until Tender. Cover with foil and bake for about 35–40 minutes, or until the rice is cooked through and has absorbed most of the liquid.
  • Top with Cheese. Remove the foil, sprinkle the mozzarella evenly over the top, and return to the oven for another 5–7 minutes until melted and bubbly.
  • Serve and Garnish. Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley for a burst of color and freshness.

This dish pairs beautifully with a fresh green salad or warm pita bread for soaking up the creamy sauce.
