Ingredients
  

Vegetables

  • 2 large leeks cleaned and sliced
  • 1 medium onion sliced

Fats

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter can use plant-based butter

Herbs and Spices

  • ½ teaspoon dried thyme
  • salt to taste
  • black pepper to taste

Instructions
 

Preparation

  • Clean the leeks: Trim off the roots and the top dark green parts. Cut the leeks in half and slice into thin half-moons. Clean in a salad spinner or bowl with water.
  • Heat oil and butter in a skillet over medium heat.
  • Add onion, leeks, and thyme. Sprinkle with salt and cook for 8-10 minutes, stirring often until soft and browned.
  • Taste and season to perfection with salt and black pepper and serve.

Notes

Don't skip washing the leeks. Store leftovers in the fridge for about 3 days. Reheat as needed.
