Soup Base
- 1 cup red lentils well rinsed
- 1 can coconut milk
- 4 cups vegetable broth low-sodium
- 1 medium onion finely chopped
- 3 cloves garlic minced
Spices and Flavor
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon chili powder or flakes to taste
- 1 inch ginger fresh grated
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
Optional Garnishes
- ¼ cup fresh cilantro chopped
- 1 lime lime wedges for serving
Cooking Instructions
Heat a tablespoon of oil in a large pot over medium heat. Cook onions and garlic until fragrant and translucent, about 3–4 minutes, stirring occasionally.
Add turmeric, cumin, chili flakes, and grated ginger to the pot. Stir constantly for about 1 minute until the spices bloom and release their warm, earthy aroma.
Pour in rinsed red lentils and vegetable broth. Bring to a gentle boil, then skim any foam and stir to combine all the ingredients into a golden-orange mixture.
Reduce heat to low, cover the pot, and let the soup simmer for 20–25 minutes until the lentils are tender and starting to break down into a creamy texture.
Uncover, pour in creamy coconut milk, and stir gently. Cook over low heat for 5 minutes until the soup thickens and you see lovely cream-colored swirls.
Taste the soup, then add salt and pepper as needed. Ladle into bowls and garnish with fresh cilantro and a lime wedge for a bright, zesty finish.
