Ingredients
  

Crust

  • 10 chocolate graham crackers
  • ¼ cup melted butter

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ¼ cup sour cream
  • ½ cup sugar
  • ½ cup mascarpone cheese
  • 2 large eggs
  • 2 tablespoon cocoa powder
  • red food coloring

Strawberry Mousse

  • 1 ½ cups heavy cream
  • ½ cup white chocolate chips, melted
  • ½ cup sweetened condensed milk
  • 1 teaspoon strawberry extract
  • 2 cups diced strawberries
  • ¼ cup water
  • 2 teaspoon unflavored gelatin

Whipped Topping

  • 8 oz cream cheese, softened
  • cup sugar
  • Extra strawberries for garnish

Instructions
 

Preparation

  • Preheat oven to 325°F. Wrap springform pan in foil.
  • Press chocolate graham cracker crust into the pan. Chill.
  • Blend cream cheese, eggs, sour cream, sugar, mascarpone, cocoa, and food coloring until smooth.
  • Pour over crust and bake in water bath for 70 minutes.
  • Cool completely. Add sliced strawberries on top.
  • Whip cream to stiff peaks. Blend mascarpone, white chocolate, condensed milk, extract, and strawberries.
  • Dissolve gelatin and add to mousse base. Fold in cream.
  • Spread mousse over cheesecake and chill for 1 hour.
  • Blend cream cheese, melted chocolate, sugar, and extract.
  • Add cream and whip to fluffy topping.
  • Pipe whipped topping over mousse. Chill overnight.
  • Garnish with strawberries. Slice and serve.

Notes

Let each layer chill before adding the next. Use acetate for cleaner edges if desired. Slice with a warm knife for clean servings.
