Ingredients
  

Dough and Frosting

  • 16 oz refrigerated cookie dough softened at room temperature for 1 hr
  • 8 oz cream cheese softened to room temperature
  • 2 tablespoon unsalted butter softened to room temperature
  • 2 teaspoon vanilla extract
  • 2 cups powdered sugar

Fruit Toppings

  • 1.5 cups sliced strawberries
  • 2 kiwis skin removed and sliced
  • 0.5 cup blueberries
  • 9 oz canned mandarin orange sections drained and pat dry with a paper towel

Instructions
 

Preparation

  • Preheat the oven to 350℉. Spray a round pizza pan with non-stick cooking spray or line with parchment paper.
  • Let the cookie dough sit at room temperature to help it soften. Press it out into the shape of the pizza pan. Bake for 15 minutes or until golden brown. Let cool completely before adding frosting.
  • In a large bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Spread the cream cheese frosting on the cooled sugar cookie with a spatula, leaving a little bit of cookie exposed around the edges.
  • Wash and slice the strawberries, kiwis, and blueberries. Arrange the fruit in circles on top of the frosting. Serve immediately or chill until ready to serve.

Notes

Pat fruit dry before decorating. Cool crust completely before frosting. Use only fresh fruit, no frozen.
