Greek Chicken Meatballs
- 1 lb Ground Chicken
- ½ cup Feta Cheese, crumbled
- ½ cup Bread Crumbs
- 1 Egg
- ½ teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon Oregano
- ½ teaspoon Dried Dill
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ½ Lemon, zested
- ½ cup Onion, finely diced
Lemon Orzo
- 1 cup Orzo
- 2 tablespoon Lemon Juice fresh squeezed if possible
- 2 tablespoon Butter
For Serving
- Cucumber
- Tomatoes
- Tzatziki
- Feta
- Fresh Dill
Cooking Instructions
Preheat oven to 350.
In a large bowl combine all meatball ingredients and mix well to combine.
Divide into 12 equally sized sections and roll into a ball.
Place onto a parchment lined baking sheet and bake for 20-25 minutes or until internal temperature reaches 165F.
Cook orzo according to package, drain and add to a medium sized bowl.
Add butter and lemon juice. Mix to combine.
Add orzo, cooked meatballs, cucumbers, tomatoes, Tzatziki, extra feta, and fresh dill to a bowl and enjoy!
