Ingredients
  

  • 4 tails lobster 5–6 oz each, thawed if frozen
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 1 lemon zest zest of 1 lemon
  • 1 lemon juice juice of 1 lemon
  • 1 tablespoon fresh parsley chopped, plus extra for garnish
  • salt to taste
  • black pepper freshly ground, to taste
  • 1 tablespoon neutral oil for brushing (such as canola or avocado)

Instructions
 

  • Thaw the lobster tails completely if using frozen. Pat them dry with paper towels. Use kitchen shears to cut through the top shell lengthwise, stopping just before the tail fin. Gently lift the meat through the shell slit and rest it on top, keeping it attached at the base.
  • Lightly brush the exposed lobster meat with oil and sprinkle with salt and pepper. Set aside while you heat the grill.
  • Preheat your grill to medium-high heat (about 450–500°F). Make sure the grates are clean and oiled to prevent sticking.
  • Melt butter in a small saucepan over low heat. Add minced garlic and lemon zest, letting it cook for about 1 minute until fragrant. Remove from heat and stir in lemon juice and chopped parsley.
  • Place the lobster tails shell-side down on the grill grates. Close the lid and cook for 4–5 minutes. Brush generously with garlic lemon butter. Carefully flip the tails flesh-side down and grill another 4–6 minutes, basting once more.
  • Transfer the lobster tails to a platter. Drizzle with remaining butter sauce, sprinkle with fresh parsley, and serve with lemon wedges.

Notes

For extra flavor, let the butter sauce steep for a few minutes after cooking the garlic and zest. You can prepare the garlic lemon butter sauce up to a day in advance—just reheat before using. Tails can be skewered with soaked wooden sticks to prevent curling on the grill.
