Ingredients
  

Vegetables

  • ½ large English cucumber grated

Dairy

  • 1 cup plain Greek yogurt I use 2%

Seasoning

  • 1 clove crushed garlic
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon lemon juice
  • ¼ teaspoon lemon zest
  • 1 teaspoon extra virgin olive oil optional

Instructions
 

Preparation

  • Place cucumber on a clean kitchen towel and gently squeeze the excess water.
  • In a medium bowl, combine the cucumber, yogurt, garlic, dill, lemon juice and salt.
  • Finish with lemon zest and a drizzle of extra virgin olive oil. Enjoy!

Notes

I tweaked the recipe a bit from what you will see in the video, so watch the video for the visual, but be sure to read the written recipe for exact measurements. Place any leftover tzatziki in an airtight container for freshness and it will keep in the fridge for 4-5 days. After the dip has been in the refrigerator for a bit, it may accumulate liquid on top. Simply stir it right back in before serving.
