Hot Honey BBQ Chicken Quesadillas

Ingredients
  

Chicken Filling

  • 2 cups cooked shredded chicken rotisserie chicken works well
  • ½ cup BBQ sauce your favorite brand
  • 2 tablespoons hot honey or mix honey with cayenne

Tortillas and Cheese

  • 4 10-inch flour tortillas fresh ones fold better
  • 2 cups shredded Monterey Jack or cheddar cheese a blend of both works well

Additional Ingredients

  • 1 tablespoon butter melted
  • sour cream optional for serving
  • guacamole optional for serving
  • cilantro optional for serving

Instructions
 

Preparation

  • In a medium bowl, mix the shredded chicken with BBQ sauce and hot honey until well combined. The mixture should look glossy.
  • Lay out the four tortillas on a flat surface. Sprinkle ¼ cup of cheese over one half of each tortilla, staying about an inch from the edges.
  • Divide the chicken mixture evenly among the tortillas (about ½ cup per tortilla), spreading it over the cheese. Top each with another ¼ cup of cheese, then fold the other half of the tortilla over the filling. Press down gently to seal.

Cooking

  • Heat a large skillet or griddle over medium heat. Brush the top of each folded quesadilla with melted butter.
  • Place quesadillas butter-side down in the hot skillet. Immediately brush the top side with remaining butter. Cook for 2-3 minutes until golden brown with darker spots, then flip and cook another 2-3 minutes until cheese oozes slightly from edges.
  • Remove from the skillet and let rest for a minute before cutting into wedges. If working in batches, keep finished quesadillas warm in a 200°F oven.
  • Serve warm with sour cream, guacamole, or fresh cilantro if desired.

Notes

Fresh tortillas fold better than old ones. A blend of Monterey Jack and cheddar cheese works best. Let quesadillas rest before cutting to prevent filling from spilling. For extra flavor, add diced red onions or jalapeños to chicken mixture. Adjust hot honey amount to your heat preference.
