Ingredients
  

For the Crepes

  • 1 ¼ cup milk use whole milk for a richer flavor and texture

  • 1 cup milk cold, for a smooth filling

For the Chocolate Ganache

  • 8 oz semi-sweet chocolate chips melts beautifully for topping
  • 1 cup heavy cream heat until just hot

Preparation

  • Blend the Batter: Combine milk, heavy cream, flour, eggs, sugar, butter, and salt in a blender. Process until combined, then let it sit for 15 minutes to thicken.
  • Prepare the Skillet: Heat a non-stick skillet over medium heat and lightly coat it with butter.
  • Cook the Crepes: Pour ⅓ cup of batter into the skillet, swirling until it forms an even layer. Cook for 30-45 seconds, flip and cook for another 20-30 seconds.
  • Make the Filling: In a bowl, whisk together vanilla pudding mix and cold milk until thickened. Fold in whipped topping until combined.
  • Prepare the Ganache: Heat heavy cream in a saucepan until hot but not boiling. Pour over chocolate chips and let sit for 20 seconds before stirring until smooth.
  • Assemble the Crepes: Scoop ⅓ cup of filling into each crepe, roll or fold, and drizzle with ganache.
