Ingredients
  

For the Crust

  • 1 whole chicken about 4 lbs, patted dry
  • 1.5 lbs baby potatoes halved
  • 1 lb fresh green beans trimmed
  • 3 tablespoon olive oil divided
  • 4 cloves garlic minced
  • 2 tablespoon fresh rosemary chopped
  • 2 tablespoon fresh thyme chopped
  • 1 lemon sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Prepare the Crust

  • Preheat oven to 425°F (220°C). In a small bowl, mix 2 tablespoon olive oil, garlic, rosemary, thyme, salt, and pepper.
  • Rub the herb mixture all over the chicken, including under the skin. Place lemon slices inside the cavity.
  • Toss baby potatoes and green beans with remaining 1 tablespoon olive oil in a large roasting pan. Place chicken on top.
  • Roast for 60-70 minutes until chicken reaches 165°F (74°C) and potatoes are golden. Let chicken rest 10 minutes before carving.
  • Serve chicken with potatoes and green beans, drizzled with pan juices.
