Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • cup butter or margarine, melted

Filling

  • 32 oz cream cheese, softened 4 packages (8 oz. each)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 4 units eggs
  • 0.5 cup key lime juice (or lime juice)

Topping

  • 1.5 cups heavy cream
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat oven to 325 degrees.
  • Combine graham crumbs, 3 tablespoons sugar, and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, 1 cup sugar, and vanilla with mixer until blended. Add eggs, 1 at a time, mixing at low speed after each just until blended.
  • Gently blend in lime juice.
  • Pour over crust.
  • Bake 55 min. or until the center is almost set. Run a knife around the rim of the pan to loosen the cake; cool before removing the rim.
  • Refrigerate cheesecake for 4 hours.
  • Whip the heavy cream with powdered sugar and vanilla and whip until stiff peaks form.
  • Spread the whipped cream on top of the chilled cheesecake.
  • Top with lime zest.
  • Serve!
