Meatloaf Ingredients

  • ¾ cup Seasoned Breadcrumbs
  • 1 ½ pounds Ground Beef, lean
  • 1 onion, diced (yellow onion)
  • 3 teaspoon Garlic, freshly minced
  • 1 Egg
  • ¼ cup BBQ Sauce
  • ¼ cup Tomato Sauce
  • ½ cup Peas, frozen
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Parsley, chopped

Potatoes

  • 1 ½ pounds potatoes, peeled and quartered (Red potatoes)
  • ¼ cup Heavy Whipping Cream
  • 4 tablespoon Butter
  • 1 cup Cheddar Cheese, shredded

Instructions
 

Preparation and Cooking

  • Preheat the oven to 400°F.
  • In a skillet over medium heat, add the oil and sauté the onions until they are soft and translucent.
  • Stir in the garlic and sauté for another 30 seconds.
  • Remove the skillet from the heat and set it aside to cool.
  • Once the onions have cooled, continue.
  • Boil the potatoes until fork tender and drain.
  • In a mixing bowl, combine the ground beef, egg, breadcrumbs, tomato sauce, BBQ sauce, along with the salt, pepper, and parsley.
  • Knead with your hands until completely mixed together.
  • Fold in the frozen peas.
  • Form the meat mixture into a loaf-shaped log.
  • Place the meat into a baking pan and bake for 30 minutes.
  • While the meat is cooking, blend the potatoes with the butter and heavy whipping cream.
  • Remove the meatloaf from the oven.
  • Spread the mashed potatoes over the top of the meatloaf and sprinkle the cheddar cheese on the potatoes.
  • Return to the oven and bake for an additional 5 minutes.

Notes

Yes, you can use seasoned mashed potatoes if you have a flavor such as Garlic and Cheese that you love making.
