Ingredients
  

Vinaigrette

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly cracked

Salad

  • 1 cucumber use English cucumber
  • 1 pint grape tomatoes
  • ½ red onion
  • ¼ bunch fresh parsley chopped (about ½ cup)
  • 1 15 oz. can cannellini beans
  • 1 12 oz. can chunk light tuna suggested for texture
  • 2 oz. feta cheese

Instructions
 

  • Make the vinaigrette first, combining the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper. Whisk together or shake in a jar.
  • If desired, soak onion slices in ice water for 5 minutes to soften. Otherwise, finely dice the onion, cut the cucumber into quarter rounds, halve the tomatoes, and chop the parsley.
  • Combine cucumber, tomato, onion, and parsley in a bowl. Pour the vinaigrette over top and stir until coated.
  • Rinse and drain the beans and tuna. Add them along with the feta to the salad and gently stir to combine.
  • Serve immediately, or refrigerate for up to four days. Stir gently before serving to redistribute the dressing.

Notes

You can add, substitute, or skip salad ingredients based on your needs. Delicious additions include sun-dried tomatoes, olives, bell peppers, chickpeas, avocado, or spinach.
