For the Dates
- 10 pieces Medjool dates remove pits
- 10 pieces Whole almonds optional, for stuffing
For the Coating
- 1 cup Dark chocolate chips rich in antioxidants
- ½ cup Chopped almonds for sprinkling
Preparation
Start by removing the pit from each Medjool date using a paring knife. Make a small cut on one side, gently pry it open, and press the date closed afterward. Set all the dates aside.
If you'd like a delightful surprise, stuff each date with one or two whole almonds before sealing them back up. This adds a wonderful crunch and flavor!
Finely chop the remaining almonds and place them in a bowl. This will be used for coating the chocolate-covered dates, enhancing each bite with nutty goodness.
Place your chocolate chips in a heat-safe bowl set over a measuring cup filled with just-boiled water. Stir the mixture until all the chips are beautifully melted and smooth.
Taking one date at a time, dip it into the melted chocolate, ensuring that it is entirely covered by that glossy, rich chocolate delight.
Once coated, take the chocolate-covered date and roll it in the chopped almonds, gently pressing the nuts into the chocolate to help them stick. Set it aside on a dish.
Finally, refrigerate the dates for at least 30 minutes until the chocolate is hardened. Store any leftovers in a sealed container in the fridge.
