- 1.5 pounds boneless, skinless chicken breasts about 3 breasts
Seasonings
- 1.25 teaspoons kosher salt divided
- ¼ teaspoon freshly ground black pepper
- 2 teaspoons Italian seasoning
Liquids
- 3 tablespoons olive oil divided
- ½ cup low-sodium chicken broth
- ½ cup heavy cream
Cooking Chicken
Cut the chicken breasts across the grain into ½-inch-thick slices, season with ¾ teaspoon kosher salt and black pepper, toss to coat.
Heat 2 tablespoons of olive oil in a large skillet, cook half of the chicken until browned, then transfer to a plate and repeat with remaining chicken.
Combine Ingredients
Add the remaining olive oil, bell pepper, onion, remaining salt, and Italian seasoning to the skillet, cook until beginning to brown.
Add chicken broth and cook until reduced by half, then add Parmesan and heavy cream, bring to a simmer.
Return chicken to the pan with pepperoncini, toss to coat in the sauce and serve with more Parmesan as desired.
