Ingredients
  

Chicken and Rice Ingredients

  • 4 pieces bone in skin on chicken thighs
  • 0.5 tablespoon Tony's Creole
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 7 oz smoked sausage
  • 2 tablespoon olive oil
  • 2 stalks celery, chopped
  • 1 small onion, chopped
  • 0.5 bell pepper chopped
  • 5-6 cloves garlic, chopped
  • 2 tablespoon tomato paste
  • 2 teaspoon Better Than Bouillon roasted chicken base
  • 4 oz white wine
  • 1 lemon juiced
  • 0.5 tablespoon Slap Yo Mamma seasoning
  • Louisiana hot sauce A couple shakes
  • Salt & pepper to taste
  • 1 cup long grain rice
  • 1.5 cups water

Instructions
 

Cooking Steps

  • Season the chicken thighs on both sides with Tony’s Creole, smoked paprika, onion powder, garlic powder, and Italian seasoning. Set them aside.
  • Slice smoked sausage on the diagonal and brown in a pan with olive oil, then remove and set aside.
  • In the same pan, brown the seasoned chicken thighs for 5 minutes on each side, then set aside.
  • Add chopped celery, onion, bell pepper, and sauté until golden. Add chopped garlic and sauté another minute. Sauté tomato paste, then add chicken base.
  • Deglaze with white wine and let alcohol burn out. Then add lemon juice, Slap Ya mama seasoning, hot sauce, and salt & pepper.
  • Add rice, sauté for a couple of minutes, then add water and bring to a boil. Lower to a simmer and nestle in the sausage and chicken. Cover and bake at 400°F for 40 minutes.

This dish is inspired by New Orleans cuisine and offers a rich blend of flavors with minimal cleanup.
