Onion and Cheese

  • 1 large onion cut into ¼ inch rounds
  • 1 cup Parmigiano Reggiano cheese
  • 1 tablespoon olive oil drizzle
  • Greek seasoning to taste

Preparation

  • Preheat the oven to 400F (200C). Line a baking sheet with parchment paper.
  • Slice the onions into rings with a knife or use a mandoline. Add an even layer of cheese to the baking sheet followed by the onion slices.
  • Make sure you arrange each onion right next to each other.
  • Drizzle a tiny bit of olive oil onto each one and season with Greek seasoning.
  • Bake for 15-20 minutes or until golden! Let them cool for 10 minutes. Enjoy!

Notes

Sweet onions are perfect for balancing the savory Parmigiano Reggiano cheese. Feel free to use yellow onions or your favorite variety. You can use your favorite hard cheese. For thinly sliced onions, use a mandoline. Instead of Greek seasoning, sprinkle with Italian seasoning or your favorite blend of herbs and spices. Add a pinch of cayenne pepper for an extra kick.
