CHICKEN + SPICES
- 2 medium chicken breasts approx. 20 ounces
- 0.5 teaspoon salt
- 0.5 teaspoon pepper
- 0.5 teaspoon onion powder
- 0.5 teaspoon garlic powder
- 0.5 teaspoon paprika
- Olive oil for drizzling
PASTA
- 16 oz. penne pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 large shallot chopped (about ½-3/4 cup)
- 4-6 cloves garlic minced
- 0.25 teaspoon red pepper flakes
- 0.25 cup flour
- 2 cups low-sodium chicken broth
- 2 cups half and half or milk whisked with 1 TBS cornstarch or evaporated milk mixed with 2 tsps cornstarch
- 2 teaspoons chicken bouillon powder, crushed cubes, or base
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon pepper
- 1.5 cups FRESHLY grated Parmesan cheese packed (use micro grater)
- Fresh parsley for garnish, optional
- Fresh lemon juice optional
Cooking Instructions
Cook pasta in heavily salted water until al dente. Reserve one cup of pasta water before draining. Drain the pasta and set aside.
Slice the chicken through the equator to create four fillets. Cover with plastic wrap and pound to tenderize.
Whisk the Chicken Spices together. Pat chicken dry, drizzle with olive oil, and coat with spices. Let it rest.
Heat 2 tablespoons of olive oil in a large braiser over medium-high heat. Cook chicken for 4-5 minutes per side until golden and cooked to 160°F. Rest for at least 5 minutes before slicing.
Melt two tablespoons of butter in the chicken drippings. Sauté shallots for 3-4 minutes until tender. Add garlic and red pepper, cooking for an additional 30 seconds. Sprinkle in flour and cook for 1 minute.
Reduce heat, whisk in chicken broth and half-and-half until smooth. Stir in chicken bouillon and spices. Simmer until thickened.
Reduce heat, stir in Parmesan cheese until melted.
Stir in pasta and chicken. Add reserved pasta water if needed to reach desired consistency. Season with salt and pepper to taste, garnish with fresh parsley if desired.
