Ingredients
  

Carrots and Seasoning

  • 12 ounces medium carrots (about 4)
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground
  • 3 tablespoons grated or shredded Parmesan cheese (about ¾ ounce)

Preparation

  • Place a rimmed baking sheet in the oven, then heat the oven to 425ºF. Meanwhile, peel the carrots and cut them into 1 ½- to 2-inch pieces.
  • Place the carrots and water in a microwave-safe bowl, cover with plastic wrap, and microwave on HIGH until tender, about 5 to 6 minutes.
  • Drain off any residual liquid. Add olive oil, kosher salt, and black pepper, and toss to coat.
  • Arrange carrots on the hot baking sheet and smash them until they crack and flatten. Sprinkle with Parmesan cheese.
  • Roast until the cheese is melted and browned, about 13 to 15 minutes. Let cool for 5 minutes before serving.
