Carrots and Seasoning
- 12 ounces medium carrots (about 4)
- 2 tablespoons water
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper freshly ground
- 3 tablespoons grated or shredded Parmesan cheese (about ¾ ounce)
Preparation
Place a rimmed baking sheet in the oven, then heat the oven to 425ºF. Meanwhile, peel the carrots and cut them into 1 ½- to 2-inch pieces.
Place the carrots and water in a microwave-safe bowl, cover with plastic wrap, and microwave on HIGH until tender, about 5 to 6 minutes.
Drain off any residual liquid. Add olive oil, kosher salt, and black pepper, and toss to coat.
Arrange carrots on the hot baking sheet and smash them until they crack and flatten. Sprinkle with Parmesan cheese.
Roast until the cheese is melted and browned, about 13 to 15 minutes. Let cool for 5 minutes before serving.
