Ingredients
  

Fruit

  • 3 oranges

Dry Ingredients

  • 300 g flour
  • 0.5 teaspoon baking powder
  • 150 g brown sugar
  • 1 pinch salt

Wet Ingredients

  • 200 ml light olive oil
  • 3 eggs
  • 1 teaspoon vanilla extract optional
  • 1 cube butter

Preparation

  • Grate the oranges and mix the zest with the sugar. Rub the two ingredients together to release the oils and aromas.
  • Juice the oranges. Use 180 ml of juice and mix it with the sugar, vanilla extract, oil, and the 3 eggs. Stir well.
  • In a large bowl, add the sifted flour, baking powder, and salt. Once mixed, add the prepared liquid mixture.
  • Combine everything together.
  • Before pouring the batter into the pan, take a cube of butter and spread it all over the inside of the pan. Then add a tablespoon of flour and coat the interior.
  • Pour in the batter and bake the cake at 180 °C for 40 minutes. Check with a toothpick if it's cooked in the center before removing from oven.
  • Once baked, let it rest for at least 15 minutes before unmolding.
