- 1 can whole kernel corn 15.25 ounce, drained
- 1 can creamed corn 14.75 ounce
- 1.25 cups crushed rich rectangular or round crackers divided
- 1.5 cups shredded pepper Jack cheese divided
- 0.5 teaspoon bottled hot pepper sauce
- 0.25 teaspoon salt
- 2 tablespoons butter melted
Preheat oven to 375°. Butter a 2-quart au gratin or baking dish. In a medium bowl, beat egg slightly. Stir in whole kernel corn, creamed corn, ¾ cup of the crushed crackers, 1 cup of the cheese, hot sauce and salt. Spread evenly in prepared baking dish.
In a bowl, stir together melted butter and remaining ½ cup crackers. Stir in remaining ½ cup cheese. Sprinkle evenly over casserole. Bake about 45 minutes or until topping is golden brown. Let stand 10 minutes before serving.
