Ingredients
  

Cream Cheese Mixture

  • 1 package cream cheese 8 ounces
  • 0.25 cup white sugar
  • 1 egg beaten

Pumpkin Batter

  • 1.5 cups white sugar divided
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 1 cup pumpkin purée
  • 0.5 cup butter melted
  • 0.33 cup water
  • 1 egg beaten

Preparation

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 5-inch loaf pan.
  • Combine cream cheese, ¼ cup sugar, and 1 egg in a large bowl; beat with an electric mixer until smooth and creamy.
  • Combine 1 ½ cups sugar, flour, baking soda, cinnamon, salt, and nutmeg in a separate bowl.
  • Combine 1 egg, pumpkin, butter, and water in another bowl. Mix in flour mixture until moistened. Reserve 2 cups pumpkin batter. Pour remaining batter into prepared pan. Pour cream cheese mixture over top. Top with reserved pumpkin batter. Cut through batter several times with a knife for a swirl effect.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool for 10 minutes. Remove from pan to cool completely.

Notes

This recipe can be doubled to yield three 8 x 4-inch loaves and freezes well.
