Ingredients
  

  • 2 cups quinoa rinsed well, drained and cooked using vegetable broth
  • ¼ cup shallot or onion diced
  • 1 teaspoon Dijon mustard
  • 3 tablespoons cider or rice vinegar
  • cup extra-virgin olive oil
  • 2 cups leftover chicken meat from cooked or rotisserie chicken
  • ½ cup dried cranberries or raisins
  • 1 cup fresh flat-leaf parsley chopped
  • ½ cup roasted salted almonds chopped
  • 1 unit avocado pitted, peeled and diced
  • Salt and pepper to taste

Instructions
 

  • Whisk the shallot or onion, vinegar, mustard, oil and salt and pepper in a very large bowl.
  • Add cooked quinoa, chicken, cranberries or raisins, and parsley. Fold until evenly mixed and cooled.
  • Add more salt and pepper to taste.
  • Divide the salad among dishes and top with the chopped almonds and avocado.

Notes

For added flavor, consider toasting the almonds before adding them to the salad.
