Ingredients
  

Base Ingredients

  • 200 g Butter softened
  • 200 g Caster or granulated sugar
  • 3 medium Eggs
  • 150 g Greek yoghurt
  • 250 g Plain or all-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Baking soda
  • 300 g Raspberries fresh or frozen
  • 40 g Cornflour
  • 100 g White chocolate melted
  • 250 g Mascarpone
  • 100 g Icing sugar
  • 300 ml Whipping cream

Flavor Enhancer

  • 1 pinch Salt to enhance sweetness

Baking Instructions

  • Preheat the oven to 180°C (350°F).
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the Greek yoghurt until combined.
  • In another bowl, combine the flour, baking powder, baking soda, cornflour, and salt.
  • Gradually add the dry ingredients to the wet mixture.
  • Fold in the raspberries and melted white chocolate gently.
  • Pour the mixture into the prepared cake pan and bake for 45 minutes or until a skewer comes out clean.
  • Let the cake cool completely before frosting with whipped cream and mascarpone mixture.

Notes

This cake is best enjoyed fresh. You can also garnish with additional raspberries and chocolate shavings.
