Ingredients
  

For the Crust

  • 1.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, cold and cubed
  • 4-5 tablespoons ice water

For the Filling

  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon granulated sugar
  • 4 ounces goat cheese, softened
  • 1 each egg, beaten (for egg wash)
  • 0.25 cups honey
  • 0.5 teaspoon freshly ground black pepper

Instructions
 

Prepare the Crust

  • Preheat oven to 375°F (190°C). In a bowl, mix flour and salt. Cut in butter until pea-sized crumbs form. Gradually add ice water until dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  • Toss strawberries with sugar and spread on a baking sheet. Roast for 15 minutes until softened. Let cool slightly.
  • Roll out dough on a floured surface into a 12-inch circle. Spread goat cheese in the center, leaving a 2-inch border. Top with roasted strawberries.
  • Fold dough edges over filling, pleating as you go. Brush crust with egg wash. Bake for 25-30 minutes until golden.
  • While baking, warm honey in a small saucepan with black pepper over low heat for 5 minutes. Drizzle over galette before serving.
