How to Make Hawaiian Huli Huli Chicken Stack

  • In a medium bowl, whisk together the teriyaki sauce, pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and toasted sesame oil until well combined.
  • Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 2 hours, or overnight.
  • Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill each piece for about 6–7 minutes per side.
  • Add the fresh pineapple rings onto the grill. Cook them for 2–3 minutes on each side until they are caramelized and golden brown.
  • In a small saucepan, take that reserved marinade and bring it to a boil. Let it simmer for 5–6 minutes until thickened.
  • Spoon a generous amount of cooked white rice onto a plate, layer the grilled chicken, add a caramelized pineapple ring, and drizzle with the thickened glaze. Garnish with sliced green onions and sprinkle with sesame seeds.
