How to Make Hawaiian Huli Huli Chicken Stack
In a medium bowl, whisk together the teriyaki sauce, pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and toasted sesame oil until well combined.
Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 2 hours, or overnight.
Preheat your grill or grill pan to medium-high heat. Remove the chicken from the marinade and grill each piece for about 6–7 minutes per side.
Add the fresh pineapple rings onto the grill. Cook them for 2–3 minutes on each side until they are caramelized and golden brown.
In a small saucepan, take that reserved marinade and bring it to a boil. Let it simmer for 5–6 minutes until thickened.
Spoon a generous amount of cooked white rice onto a plate, layer the grilled chicken, add a caramelized pineapple ring, and drizzle with the thickened glaze. Garnish with sliced green onions and sprinkle with sesame seeds.
