Equipment

Ingredients
  

  • 10 oz pumpkin puree homemade or canned
  • 4 oz butter 1 stick
  • 2.5 teaspoons kosher salt
  • 26 oz bread flour about 5 ¾ cups measured by aerating, spooning, and sweeping
  • 2 teaspoons yeast active dry or instant
  • 1 Tablespoon minced sage
  • 1 Tablespoon minced rosemary
  • 1 teaspoon dried poultry seasoning or substitute 1 Tablespoon poultry seasoning if fresh herbs are unavailable
  • 9 oz slightly warm water 1 cup plus 2 Tablespoons

For the Design, if Desired

  • 1 egg yolk egg yolk combined with ½ teaspoon water
  • sage leaves
  • bread flour as needed

Instructions
 

  • In the bowl of your stand mixer, whisk together the pumpkin, butter, and salt.
  • Add the flour, salt, and herbs to the bowl. Sprinkle the yeast on top.
  • Pour in the warm water, and, using the dough hook, mix until a shaggy dough comes together, about 2-3 minutes.
  • Increase the speed to medium and knead for 10 minutes until shiny and smooth.
  • With oiled hands, gather the dough into a ball and let it rise until at least doubled, about 1 to 1.5 hours.
  • Preheat the oven to 425F and put a baking stone on a rack in the center of the oven.
  • Shape the dough into desired form, cover, and allow to rise until puffy, about 45 minutes to 1 hour.
  • Bake for 10 minutes at 425F, then reduce the temperature to 375F to finish baking.
  • Cool to room temperature and enjoy.

To Make the Optional Herb Imprints

  • Brush the back of a sage leaf with egg yolk glue and press onto the bread.
  • Cover with plastic wrap until puffy, about 30 minutes.
  • Bake and then carefully peel off sage leaves after baking.

Notes

Use the entire can of pumpkin by increasing amounts for larger yield.
